Cheesecake I make is usually crushed digestive biscuits (Graham Crackers?), put it in a pan with a tiny bit of sugar and some butter, then pour it into a removable base tin, gently squish it all even and flat, whack it in the fridge. Then mix some icing sugar with some ricotta (or you can use a mix of cream cheese and marscapone) until it's sweet enough for your taste, maybe put a squeeze of lemon juice in, then pour that onto the base, stick it in the fridge. Make/buy some kind of coulis/sauce, put it on top, stick it in the fridge. Just before serving, take it out and put the tin on something like a short glass or a jam jar, and sloooowly wiggle the side bit free so it's only on the base of the tin. Then put that on a plate and serve, eat, stroke, have sex with, do whatever you like with it.

It's probably not the proper way but it's very much a nice way.

I don't like plain cheesecakes really, I prefer strawberry. To make them, I do pretty much the same as yourself for the base, grease a tray like crazy and then put in crushed digestive bickies (usually around half a pack), 2 tablespoons of sugar and 2 of butter and maybe 1 of flour if it needs it for consistency.

Then for the cheesy bit I put about eight or nine strawberries in a saucepan with a cup of boiled water and allow them to stew and become all juicy for about five minutes, then I spoon them into a sieve and push them through it until they're like a paste. I put 8oz of Philadelphia, 1 oz caster sugar, 5oz cream and 5 of natural yoghurt in a bowl and mix until they're all creamed together. Then I pour in the strawberry into that and mix it so it's a nice pinky colour. Once it's spread over the biscuit base and left in the fridge overnight, it's set and ready to eat!

Started working out Notes from Africa. Training my self to learn by ear is tough, but I know it'll be worth it.
