The best example of dyanamic analog sound that I can think of is Mr. Bungle's "California" and "Disco Volante". You just don't hear much music recorded like that these days...

I use 192 whenever I can as well, though I have some mp3s in 320 or VBR averaging around 256. The main thing that makes 128 stand out to me is that the clicky kick drum in most metal seems like more of a 'whhThud' than a solid 'Thump', if that makes sense.
