That's difficult. Some strats are good, most of them are crap. They are good starter-guitars, but I would recommend testing a lot of them for sound and how they play.
As for the humbuckers, that depends on what kind of sound you're looking for. Humbuckers have a got a big 'ballsy' sound, compared to single coil, which sound a lot thinner, eg. Terria.
Fender are in my opinion are a hit and miss company in the sense that you get a few good guitars and one hell of a lot of crap ones too, you have to have the patience to search one out.

That's actually true for most guitar companies, except Tom Anderson guitarworks.
Except you're buying a Tom Anderson (or other custom-made guitar), ALWAYS try before you buy. Every Fender and Gibson will sound different than the other.
i think 7string guitars are very great, because you can stay in standard tuning to use all your theorie and scales stuff to jam around AND beeing able to produce heavy sounding riffs too, because of the lower 7th string... their great ^^

I tend to go between 6 and 7 string guitars pretty much equally for my own stuff, but I play lead guitar in a funky rock band for which I use a 7 string exclusively. It allows for more possibilities when playing unison riffs with the bass player, and lets me cover the bass when he wants to playing something a little bit more out there.
