Mine, in no particular order:
Strapping Young Lad (of course. But not that I want them back necessarily, I love where Dev is now, but still)
Isis (blew me out of the water when they broke up last year)
Pink Floyd
White Stripes
Battle of Mice (they only released one album but damn was it a good album)
Metallica (yes, Metallica has been defunct since Black Album)
Light This City (wasn't a huge fan but enjoyed them from time to time)
Byzantine (same as Light This City, both are kind of remnants from my musical tastes 2-3 years ago)
Devin Townsend Band (I'd kinda say technically still together but on paper defunct)
White Zombie (only other defunct band I can think of that I care somewhat about)
And there ya go. I'd say like 6 or 7 of those I really care about and the rest weren't huge to me. Blips sure but not big blips.

This is by no means definitive... I just scrolled through my mp3s and this is what stood out to me:
SYL
Thin Lizzy
FNM
The Police
Queen
White Stripes
The Beatles
Living Colour
New Order/Joy Division
The Clash
Makes me sad that Freddie, Phil, Ian, Joe, John, George and co aren't making music and yknow, being alive and all that. But they left amazing stuff behind for us to enjoy.

Strapping Young Lad
E.S. Posthumus
After Forever
....errr I have a mental defunct that prevents me from liking bands older than myself, so most of those I enjoy are still going.

In no particular order, other than which I came up with the names:
Queen
Strapping Young Lad
Reuben
Toto: no, those reunion concerts don't count.
Boston: although a new studio album is rumoured to be 85% complete they're technically defunct. Also, with Brad Delp's death to me they lost one of the pillars of the Boston sound.
Michael Hedges
Swervedriver: they've been doing some reunion shows but no new albums (yet).
Oasis: I could argue they've been defunct after they released Morning Glory.
Oceansize
Nirvana

I very much approve of your love of Toto and Boston. As sure as Kilimanjaro rises like Olympus above the Serengeti, my other half now knows all the words to many a Toto song thanks to our road trips.

^ Hehe, awesome. I was fortunate enough to see them live for the first and last time during their Falling In Between tour. Great band, and had quite an influence on me during my early years of discovering the guitar (as did Boston, coincidentally).

Thin Lizzy touring without Phil is a #bit# like SYL touring without Dev.
No albums since Phil died.

That's just how I feel.
Or are you shocked at the mention of Oasis at all?

Definitely Maybe was okay. But if I wanted to listen to the Beatles, i'd listen to the Beatles.

SYL
Dio
Type O Negative
All three of those had profound effects on my life, and while I never loved SYL nearly as much as I love Dev's solo stuff (YAY FOR NERDINESS INSTEAD OF RAGE) when Strapping ended, I feel like my teen years did (I was 19 after all). Dio, has had a profound effect on pretty much every point in my life up through his death. My first concert was when my mom was 6 months pregnant with me during the Sacred Heart tour... life without Dio is certainly not the same.
I cannot begin to state how important Type O and Peter Steele were to my adolescence and early adulthood... so I won't.
Carnivore
Thin Lizzy
Queen
Running Wild
FNM
Soundgarden
Bruce Dickinson's solo career.
