Recipes!

Well there's a topic you didn't expect from me :lol:

The thing is, my parents are on vacation for two weeks and that means I have the entire house to myself. That's never happened before, and now I have to feed myself. So I figured I'd ask you guy and gals for some things that are easy to make (that's important because I'm not a good cook- at all) but still taste quite alright.

I can make a bit of spaghetti or macaroni, but living solely on bread and pasta doesn't sound like a good idea :P And I had some microwave-lasagne yesterday that was hardly satisfying.

So, shoot your food!

Some of my favourites

Chicken curry
Fry some chicken, add whatever random veggies you've got, stir in some red thai curry paste (this is really easy to get hold oif in our supermarkets, much easier than mixing up your own) add a tin of coconut milk, cover and leave to simmer on a low heat for as long as you can (gets tastier the longer you leave it)

Chilli (for 2 or 1 if you're greedy - you can quite happily take some bits out of this if you don't have any and it doesn't tend to ruin it)
-chop up an onion and fry in oil with half a clove of crushed garlic
-add 200g beef
-add a tin of chopped tomatoes
-bring to the boil, cover and simmer for 45 mins
-get a little bowl and put in a teaspoon of chilli powder, mix this with some of the hotliquid from the cooking
beef
- add a little cumin and 1/2 tablespoon tomato puree
- add 1/8 pint red wine, a bay leaf if you've got one and a small can of red kidney beans (or baked beans will do)
- cover it all up and leave for another hour

we normally don't have time to leave it that long and it's still pretty yummy...and adding a dried biord's eye chilli or two makes it even nicer

You can tell my bf likes spicy food, haha...of course, if you're veggie or don't like spicy food these would be less good

Random pasta sauce
Tins of chopped tomatoes are your friend, stick them in with some cooked...well, pretty much anything (veggies, meat, fish) and add to some pasta and you're on to a winner

the 'stick lots of stuff in a pan and leave it' approach is very good :)

Catfish with chili cornmeal crust

To serve one or two . . .
2 fillets, about 8 oz. each, rinsed in cold water and patted dry
1/2 c. cornmeal
1/2 c. flour
1/4 tsp. chili powder
1/2 c. fresh lemon juice
salt and pepper
2 tbsp. vegetable oil or bacon fat or an inch of oil in a deeper pan
for deep frying

>> Combine the cornmeal, flour, chili powder, salt and pepper. Dip each fillet in lemon juice then the cornmeal mixture, carefully dusting each side of the fillets.

>> Heat the fat in a heavy-bottomed skillet until it just starts to smoke. Put the fillets in the fat and cook about 5 minutes until golden brown.

>> Turn the fillets and continue to cook about 5 minutes on the other side. If deep frying, cook the fillets without turning, about 7 to 8 minutes or until golden brown.

>> Remove fish to plate and garnish with the warm sweet relish.

Sweet Pepper, Corn & Bacon Relish
1/2 each green, red, and yellow pepper, seeded and diced,
about 2 c. total
1 small red onion, diced
3 slices bacon, finely diced
2 ears corn (slice kernels off cobs), about 2 c.
1 tbsp. fresh thyme
1 tbsp. fresh chives

>> Place the bacon in a heavy-bottomed saucepan. Cook until the fat starts to render and the bacon gets crispy.

>> Immediately add peppers, onion and corn. Cook over high heat stirring constantly, until the veggies are still crispy but warmed through.

>> Add the herbs and taste for final seasoning.

Horseradish Sour Cream Sauce
1 c. sour cream
2 heaping tbsp. prepared horseradish
juice of 1/2 lemon
salt and pepper

>> Mix all ingredients.

fajitas!

just cut up a chicken breast in small pieces
cut some green/red peppers in small squares
add some onions, garlic (i usually put a small onion per person, garlic as needed)

now you need to cook the chicken in a pan
when its almost done, add in the veggies
when they are cooked, but still crisp add in salsa, as needed

take your mix into a fajita, add your prefered condiments, lettuce, cheese, sour cream etc...

pretty easy, awesomely good

TV Dinner:

-Remove wrap, except for corn. Poke hole in plastic wrap over the corn
-Microwave for 3 minutes.
-Remove brownie
-Microwave for 5 minutes
-Let sit in microwave for 1 minute
-Remove wrap over corn
-Re-REPLACE brownie (Optional)

Ta-da!

easy as hell and tasty onion thingy to put on your sandwiches:


- onion soup/cream (those that come on a little bag)
- milk cream

mix both till it tastes nice. And i'd add some oregano too :D

Well, since you live in the Netherlands like me... Get some pancakes from Albert Heijn and throw them in the microwave for a few minutes. Buy some hageslag, sugar and cheese, and there ya go, a nice dinner, without taking up too much time, which you could be spending on doing something useful; even though it is summer, so there isn't a lot of useful things to do.

Okay, to be serious now:

Mexican food is great to make. It's easy, taste great and most of the ingredients are pre-cooked available at your local supermarket.
Get some fajitas, tacos or enchiladas, fill them with beans, guacemole, spinach, rice, banana, or if you're a carnivore, meat. Sprinkle some cheese on top, put it in the oven for a few minutes... Oh boy, 'smullen maar'.

Now I'm hungry...

I don't have a recipe for haggis (nor would I), but it's always an option.
